Tuscan flan, cantucci with vin santo, tiramisù, panna cotta…


Tuscan Flan: This is an ancient Tuscan recipe prepared by hand. Eggs are beaten together with eggs and sugar, then milk is slowly added, and then a tiny bit of mint liqueur, then it is poured into a baking dish. Sprinkle a little cinnamon on top and put it in a water bath in the oven and bake at 150 °C/300°F for about 40 minutes. To check if the flan is ready, insert a toothpick in the middle of the cake and when it comes out clean, it is ready.

Cantucci with vin santo: Cantucci are typical Tuscan cookies, traditionally made with almonds. Because they are very dry they are usually dipped in a sweet dessert wine called vin santo. Our recipe results in a softer cookie so it is not strictly traditional, but you can try them to see if you like them. It’s a secret recipe handed down by our grandmothers!

Tiramisù: Tiramisù is a creamy dessert that we make by beating eggs yolks with sugar, then adding a little liqueur, then mascarpone. We then beat egg whites until stiff and blend them into the mascarpone mixture. We assemble the dish by first putting a layer of the mascarpone in a pan and then a layer of ladyfingers (pavesini), dunking each ladyfinger in coffee before placing it the pan. Then we add another layer of mascarpone, and then repeat with the ladyfingers until we have three layers.

Panna Cotta: To prepare the panna cotta we first soak gelatin in cold water. While the gelatin soaks we heat cream with half the quantity of milk and sugar, then add the softened gelatin. Place in bowls and refrigerate.
